Crispy Toast with Avocado, Scrambled Egg & Smoked Salmon

Sunday morning is steadily becoming my favourite breakfast making morning.   I felt like something healthy but still yummy.  Ready?  Here we go!

Ingredients (per person):

  • 2 slices of smoked salmon
  • 2 slices of fresh bread for the toast
  • 1/4 avocado
  • Lemon juice, to taste
  • Pepper & salt to season
  • 1 egg
  • Fresh Chives, about 2 teaspoons

Method:

First you prepare your avocado.  Peel the avocado and cut in slices in a bowl.  Then mash with a fork and season to taste with pepper and salt and add in a little of the lemon juice. Mix this well so you have a creamy smooth mass.  Set aside.

Crack your egg in a bowl, add a little milk or cream if you like and season with pepper and salt. Whisk till smooth.  Add 3/4 of your chives, but keep some apart for presentation.

Cut the bread in triangle shape and toast till golden brown in your toaster.  You can also use a grill pan and maybe add some olive oil if you like (optional).

Heat up a pan on a medium high heat and add a little bit of butter. Once your butter is melted, poor in the egg mixture.  Once this starts setting as if you’re cooking an omelette, slowly stir so you scramble the egg.  Cook as desired and take off the heat.

Now you’re ready to plate!  Take a slice of crispy golden brown toast and spread over some of the avocado mix.  Place on the plate and repeat with the other 3 pieces of toast.

Then divide the egg over the pieces of toast and place the smoked salmon on top. Finish off by sprinkling the remaining chives over the top and serve hot. Enjoy!

Tip: For a bread-free version, you can put the avocado mix on the plate, and add on a wrap of salmon around the hot egg.
