Simple starter recipe made out of smoked salmon, filled up with tomato and cucumber cubes.
Ingredients (per person):
- 1 small tomato, I used the local ‘Zenguli’ tomatoes for flavour but you could use e.g. Italian ‘Roma’ tomato or any other tomato full of flavour
- Approx. 5cm of cucumber
- 2 slices of smoked salmon
- 1 slice of Lemon, for garnish
- Pepper & Salt, to season
- some Lemon juice, fresh (optional)
- Toast (optional)
Method:
Wash both the tomato and the cucumber and dice in small cubes. Mix in a bowl with fresh pepper and salt. Add on just a little lemon juice for extra taste and freshness, if preferred.
Take a slice of smoked salmon and put in a little bit of the mix. Wrap the salmon over the mix of veggies, so you form a little wrap. Prick closed with a tooth pick so the wrap stays nice and closed.
Put your 2 wraps on a plate and place the slice of lemon on one side so you can squirt this over, if you like. Add on some of the leftover mix of tomato and cucumber on the other side for presentation.
Serve with or without the hot toast. Enjoy!
