Lunch shouldn’t always be sandwiches or Croque Monsieur, and salads can be great too.  Today I’m sharing my latest creation with you, for a lovely yummy healthy light lunch.  The sweetness of the plums fits perfectly with the brie and the avocado and the tomatoes. And the toast…I just love it!
Ingredients (per person)
- 1/4 – 1/3 Brie
- 1 medium size plum
- 1/2 avocado
- handful of cherry tomatoes
- 2 slices of multigrain bread
- dried rosemary, salt & pepper, parsley
- olive oil

Method
Take the plum and cherry tomatoes and rinse and dry these. Â Then cut the cherry tomatoes in half and place in a bowl. Â Quarter the plum and half each quarter again. Â Then cut in small pieces, before adding to the cherry tomato.
Half your avocado and peel, before cutting up in bitesize cubes. Â Do the same with the brie, and both the avocado and brie to the bowl with he tomato and plum. Â Mix well and season with pepper, salt and parsley.
Heat up your grill pan on a high heat. Â Whilst your pan is heating, rub some olive oil over one side of the bread and sprinkle well with rosemary. Â The herbs will stick a bit to the olive oil to seal in the flavour whilst grilling. Â When your pan is hot, add the bread with the olive oil side down for a few minutes until the grill marks appear on the bread (or longer, as you prefer). Â Sprinkle some salt and extra rosemary on the toast before grilling the other side.
When ready, cut over length in triangles and serve hot with the salad.
