Mixed Summer Salad with Nectarine and Basil

A basic fresh salad, good as a side for an every day dinner or great for barbecues. The combination of the fresh basil with the sweet juicy nectarines and the crispy lettuce is just lovely!

Ingredients:

  • Portion of Lettuce (e.g. Romain, mixed or Rucola)
  • 5-7 cherry tomatoes
  • 3-5 radishes (per person)
  • 1/4 nectarine (per person)
  • Fresh basil leaves & Parsley
  • handful of grated carrots

Method:

Wash or rinse all your ingredients – make sure they are well dried so they don’t stick, especially the herbs.

I like rucola for it’s spiciness but here i used a mixed salad. Cut the cherry tomatoes over lenght.  Then dice or cube the cucumber and radishes – this will mix up the shapes in your salad and make it look tastier.

Now take your nectarine, half and remove the stone. Cut the flesh in thin moon shaped slices. Peel and grate your carrots.

Mix all the veggies in a bowl.  Last but not least, i like rolling basil leaves thightly in a cigar shape. When you slice the leaves, you end up with thin long slivers. Cut the fresh parsley finely and add these to the salad. Season with pepper and salt to flavour and enjoy!

Tip: Add some olive oil for extra smoothness!
