To those who know me, it is no secret that one of my favourite fruits is watermelon. There is something about the juicy, not too sweet taste that reminds me of summer. I like it so much in fact, that I try to incorporate it in salads aside from having this red fruit as dessert or a snack. Even as a child I used to eat quite a lot of it in summer, picking out the pits whilst munching away. No surprise thus that in today’s recipe, watermelon features again.
This salad gets it’s flavour from sweet corn, cous cous, Prosciutto and of course watermelon. Adding this fruit partially takes away the need for an extra dressing, and it’s sweetness is balanced out by the saltiness of the smoked ham.
Ingredients:
- 1 portion of cous cous
- 3 slices of Prosciutto
- 3 tablespoons sweet corn
- 2 slices watermelon, each a few cm thick
Method:
Prepare the cous cous as you usually would and set aside to let it cool down.
In mean time, remove the peel from the watermelon and discard. Try to remove as many of the black pits as possible. Dice in 1 -1.5cm cubes.
Place the now cold cous cous in a bowl or a deep plate. Sprinkle over the sweet corn and the watermelon, and poor the released juice over the salad. Take your prosciutto and tear the slices in strips. For serving purposes, you can roll up the strips before adding them to the salad.
Season with pepper and salt to taste and enjoy!
