Brie, Ham & Egg Melt

An open toasted sandwich with gooey brie, smoked ham and fried egg makes for a hearty breakfast or part of Sunday Brunch!

Ingredients (per person):

  • 1-2 Slices brown bread, for toasting
  • Griddle pan
  • Quarter of brie, sliced finely
  • 1-2 slices of smoked ham
  • some butter for frying the eggs
  • pepper, salt & chives for seasoning

Method:

This recipe is fairly quick and easy to make.  First heat up your griddle pan till hot and add on the toast.  Toast for a few minutes on one side and take back out of the pan.  Once all the bread is grilled, lower the heat under your griddle pan.

Per slice of bread, place 1-2 slices of smoked ham. Add on some of the cut brie, to cover most of the ham.  Replace back on the griddle pan and leave to grill slowly, so your ham heats up and your brie will start to become gooey.

All that is left is to fry your egg sunny side up:  take a frying pan and melt some butter on a high heat.  Break your egg in the pan, and season with pepper, salt and chives.  Leave your egg whites to set but your yolk still runny and hot.

To serve, you only need to take the toast out of the griddle pan and put on a plate. Now carefully lay your fried egg on top of the ham & brie toast and enjoy!
