Apple Energy Balls

These apple energy balls are made with soft dried apple, dates, pecans and spices for a sweet, little treat that tastes almost like apple pie.

Tip:  Use a scale. If you have a kitchen scale, please use it to measure your ingredients.

To make these apple pie energy balls, you’ll need both dates and dried apple rings. I would not use the crunchy ones, but use the soft and chewy apple rings.  If your dried apple seems to hard, soak it first in hot water before using. Same goes for the dates, make sure you use nice, soft dates in this recipe so everything will stick well together.  Aside from that, you will need pecan nuts (or walnuts if you like these more) and a couple of spices.

Ingredients:

  • 125gr pecans
  • 120gr dried unsweetened apple
  • 175gr packed pitted dates
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • a good pinch sea salt

Method:

  1. Add the rest of the ingredients and mix until a dough forms.  This means mix, mix and keep mixing!
  2. Roll into balls.
  3. Keep in the fridge.  This will get them to harden up.
