I don’t know about you but now that mercury’s rising, I don’t always feel like cooking… So earlier this week, I felt like a classic Mozzarella and Tomato Salad. Maybe I was inspired by my trip to Rome last week? Easy and delicious 🙂
Ingredients:
- 1 portion of small Mozzarella balls (e.g. Benna)
- 1 handful of cherry tomatoes
- fresh basil leaves
- Pepper & Salt
Method:
Drain the water from the mozzarella balls and half them. Arrange in a bowl. Wash and cut the cherry tomatoes into halves. Add in the bowl with the mozzarella.
Then take your basil leaves, place them on top of one another and roll them up tightly. Slices very finely so you end up with long slivers. Add these to the mozzarella too.
Season with salt and pepper to taste. For extra flavour, you can add Balsamic Vinegar or glaze is you like, or some Rucola.
