Pesto & Parmesan Potatoes

Those of you that have followed my blog for a while, know of my love for potatoes.  Earlier on I had already posted 12 different ways to prepare these lovely veggies, and it will likely not come as a surprise that I found another way.  One that I cannot wait to share with you!  These potatoes are a fantastic side dish and are very easy to make.

Making these will take some of your time, but these are so worth the wait!

Ingredients:

  • baby potatoes – as many as one person can eat. Alternatively you can also use normal large potatoes, which you quarter.
  • Pesto – store-bought or home made if you prefer
  • Parmesan – either grated or shavings, both work well
  • pepper & salt, to taste

Method:

First we rinse our potatoes and boil them in salted water.  I would boil them until they are nearly done, but not entirely soft.  Then flatten them with a pan or a pot until almost completely flat.

Take a pan and put on a medium heat and melt in some butter.  Add the potatoes and roast slowly until they are crispy on the outside and soft on the inside.

Add per potato a dollop of pesto and some parmesan cheese….

Leave the cheese to melt and presto, you now have lovely, gorgeous pesto buttery potatoes to go with whatever you decide to use them as a side dish for.  In my case, I added them to lovely sesame oil pancaked salmon fillet….  so yum!
