I like Chicken, honey and lime….but this combination left me quite surprised..it’s juicy, moist, tender and delicious… This recipe is based on Eating Well’s scrumptious looking version of the recipe, which I found looking around for something exactly like this. It looked sooooo good I just had to try my own version of what I saw on
Ingredients:
- 1 small clove garlic, peeled and diced
- 2 tablespoon of soy sauce
- 2 tablespoon of lime juice
- 2 tablespoon of honey
- 2 chicken thighs, with skin & bone
- pepper & salt to season
- fresh parsley (optional)
- steamed white rice (optional)
Method:
First we make the marinade by mixing the soy sauce, lime juice, honey and garlic. Add on your chicken thighs and stir to cover the meat well with the marinade. Leave to marinade in the fridge for 30-60 minutes. The longer you marinade the meat, the stronger the flavour, but be careful not to leave it longer then 1.5 – 2 hours, so the marinade doesn’t overtake the flavour of the chicken entirely.
Too cook your chicken, take a cooking pan or a skillet with high edges, and place on a high heat. Sear both sides of the chicken till all the juices are seared in and lower the heat to low to medium. Now poor in the remaining marinade and cover your chicken and leave cooking slowly for 25-30 minutes, or until cooked through.
I like to serve this with white rice and sprinkled with some fresh parsley, and some of the reduced marinade poured over the chicken. Enjoy!
