Blender Banana Oatmeal Muffins

Having tried my first banana bread recently, and still having remaining bananas at home that are just there ripening (if not tossed in my smoothies), I found further inspiration in the blender banana oatmeal muffin recipe from Erin at Wellplated.com

These muffins contain no flour nor butter, have no gluten and are sweetened only by honey.  And, the best part, they’re made in your blender.  Erin also recommends adding on chocolate chips or dried or fresh fruit, or nuts. Not having any blueberries, I broke up a square of dark chocolate with hazelnuts, and added this in for extra flavour.

Ingredients for 6 muffins:

  • 100 gr of oat flakes
  • 1 large very ripe bananas
  • 1 large eggs
  • 80 – 100ml plain Greek yogurt

What would you add to the muffins?  Blueberries, cranberries or nuts?
