Prickly Pear Bellinis

Traditionally a Bellini is a cocktail of Prosecco (or other sparkling wine or champagne) mixed with peach puree or nectar.  This is my super easy mediterranean spin on it.

Poor 40-60 ml of Prickly Pear Syrup into a champagne flute. Add on chilled Prosecco and serve.
